Well everyone… to Wonder Wednesday Episode 2. I’m trying something a little different today. Have a look and please, share it if you like it.
Here is the recipe for those who want to try it. SO GOOD!!!!
1/4 cup olive oil
1 cup chopped onion
6 cloves minced garlic
2 (28-ounce) cans crushed tomatos
1 cup tightly packed, pitted, and chopped Kalamata olives
2 tablespoons tomato paste
1/2 tablespoon dried oregano
2-3 tablespoons balsamic vinegar
1/3 cup red wine
2-4 tablespoons Hot Sauce
2-4 large leaves of fresh basil
1/2 teaspoon dried crushed red pepper flakes
Salt and pepper
1 pkg ground chicken or turkey
In a large pot, sauté the onions until translucent. Add the olives and 3 of the 6 cloves of minced garlic and sauté for 15-30 seconds. Do Not Burn! Add the red wine and balsamic vinegar and deglaze the pot. Now add the crushed tomatoes and whisk in the chicken or turkey. Because there is no fat to drain, it will cook in the sauce and add flavour! Add the rest of the garlic(I sometimes add a lot more…. I love garlic!), hot sauce, pepper flakes(optional) and let simmer. The longer the better. Salt and pepper to taste. Right before serving, add chopped basil leaves.
Because this is a hearty sauce, a fussili or rigatoni would be the right choice for pasta.
